Making Fruit Leather
I have been making a lot of apricot leather lately. I have found that if you use honey or Karo syrup to sweeten your leather with, it will make it nice and soft. Sugar tends to make it brittle. Also I had about 1/8 to 1/4 tsp. of lemon or about 1/4 cup pineapple juice to help it keep that wonderful orange color. I add about 1/4 cup of honey or more according to your taste. It is tart but very delicious. I put it on my tampoline to dry on cookie sheets that are lined with plasic wrap. I put two long sheets of plastic wrap on the sheet and make sure they are stuck together in the center or at least laying over each other well. I blanch my apricots and the skin slids right off. If the skin doesn't come off I use them with the skin on. They can only give more fiber to the body. Then I put it in my blender and blend it with everything I add, then pour it on the cookie sheets.
